Nokia N75 and Talks

It looks like everywhere I am searching I am coming to a dead end. I am
thinking this is because Iwas imagining that Talks has a pronunciation
dictionary where it would be possible to make Talks pronounce things a
certain way. For example, TTYL as talk to you later. 

So, is there such a pronunciation dictionary in Talks?

Sorry for being so dense, but what dictionary are you talking about? If
you're talking about the predictive text dictionary then you can do the
following:
1. In the edit field in some application, such as the Notes utility, make
sure you're in dictionary mode. You can press the pound key (#) twice
quickly to toggle in and out of dictionary mode.
2. Type the word, or really any word, you want to add to the dictionary. 
The actual word at this point doesn't make any difference.
3. Press the star key (*) to start cycling through the different word
matches. Again, the words you're cycling between don't make any difference,
but I find this step is necessary for the next step to work.
4. Press soft key 1. This takes you out of dictionary mode and lets you add
a word to the dictionary.
5. Now you aren't in dictionary mode, so just type the word you want to add
to the dictionary. Since you aren't in dictionary mode, you'll have to hit
the 7 key 3 times to get an 'r', for example.
6. Once you've spelled the word you want to add to the dictionary, press
soft key 1.
Now the word you just typed has been added to your dictionary. Note that
this isn't specific to the N75.
